Ingredients
  

  • 104 g filet cooked
  • 118 g shallots
  • 428 g zucchini uncooked
  • 335 g tomatoes uncooked
  • 132 g carrots uncooked
  • 8 g olive oil or avocado oil
  • Garlic
  • Pepper
  • Parsley
  • Dash of Italian seasoning
  • 2 tbspns veggie stock

Instructions
 

  • Add oil and add garlic to the pan and heat.
  • Once hot, add shallots and lightly brown.
  • Add filet, zucchini, tomatoes, carrots, seasonings (to taste), and veggie stock.
  • Cover and simmer until veggies are softened and liquid is evaporated.
  • Eat and enjoy!
