Chicken Cilantro Apple Rice

Herbs/Spices
- 0.5 tsp olive oil
- black pepper to taste
- 2 tbsp fresh cilantro chopped
- 2 tbsp white wine vinegar
Fruits / Veggies
- 1/4 cup black beans cooked
- 1/4 cup long grain brown rice cooked
- 79 grams granny smith apples cubed
- 40 grams shallots diced
- 50 grams avocado cubed
Make the vinaigrette
In a small bowl, mix the white wine vinegar, shallots, olive oil and a couple of shakes of black pepper. Mix well.
Finish and enjoy!
In a larger bowl, combine the chicken, beans, rice, and finally, pour the vinaigrette mixture on top. Stir well, serve and enjoy!
