I was never a huge beef eater but have loved experimenting with different kinds of meets. This recipe is pretty versatile because if you don’t like tenderloin, you can substitute with chicken, turkey or even pork chunks and it would taste just as yummy!

4 Block Zone Meal - Filet & Zuchs
Ingredients
- 104 g filet cooked
- 118 g shallots
- 428 g zucchini uncooked
- 335 g tomatoes uncooked
- 132 g carrots uncooked
- 8 g olive oil or avocado oil
- Garlic
- Pepper
- Parsley
- Dash of Italian seasoning
- 2 tbspns veggie stock
Instructions
- Add oil and add garlic to the pan and heat.
- Once hot, add shallots and lightly brown.
- Add filet, zucchini, tomatoes, carrots, seasonings (to taste), and veggie stock.
- Cover and simmer until veggies are softened and liquid is evaporated.
- Eat and enjoy!
