Zoned! 4 block lunch or dinner on deck. I’m not sure about you guys but I’m always on the hunt for a good bargain. I came across some fresh Mahi Mahi the other day. I pondered on it a bit because I cook with it rarely but wow, this one turned out fantastic!

4 Block Zone Recipe: Pan Seared Mahi Mahi with Cabbage, Cauliflower Rice and Pineapple Salsa!
If you add some jalapeno to the pineapple salsa, it could give you some serious extra kick.

  • 6 oz Mahi Mahi cooked
Veggies
  • 272 g cabbage uncooked
  • 132 g sliced carrots uncooked
  • 77 g pineapple salsa read below to make
  • 304 g cauliflower riced uncooked
  • 4 slices bell pepper uncooked
Oils, Herbs, Spices, Misc
  • 1.2 tspn olive oil
  • pepper to taste
  • onion flakes to taste

  • 6 oz Mahi Mahi cooked

  • 272 g cabbage uncooked
  • 132 g sliced carrots uncooked
  • 77 g pineapple salsa read below to make
  • 304 g cauliflower riced uncooked
  • 4 slices bell pepper uncooked

  • 1.2 tspn olive oil
  • pepper to taste
  • onion flakes to taste

Instructions
  1. Cook the cauliflower rice by itself until browned and softened. Set aside.
  2. Make the pineapple salsa. For a small batch, mix oil, 1/2 cup diced pineapple and 3-4 slices of diced bell peppers. If you want it extra spicy, add jalapeno.
  3. Cook the cabbage, carrots and any spices in a separate pan until veggies are softened.
  4. Layer the cabbage mixture on top of the cauliflower rice.
  5. Top with pan seared Mahi Mahi and pineapple salsa mixture.
  6. Eat and enjoy!
