Steak Meal Prep Bowls
Ingredients
- 3.5 lbs steak tips
- 2.33 tbsp olive oil
- 4.67 tsp sea salt and black pepper
- 37.33 oz cauliflower rice
- 4.67 cups kale thinly sliced
- 2.33 whole red pepper chopped
- 1.17 cup water
- 4.67 tbspn fresh lemon juice
- 2.5 tsp paprika
- 1 bunch fresh parsley chopped
Instructions
- Season the steak cubes with sea salt and fresh ground pepper
- Heat 1 tsp olive oil in a large skillet. Add steak and cook for 6-8 min on each side, depending on preference (6 min for medium-rare, 8 minutes for well-done). Don't disturb the steak while cooking, only turning it once. When done, transfer to a place and cover with foil.
- Meanwhile add cauliflower, kale and bell peppers to the sauce pan. Add water and cover. Cook on medium low heat for 8-10 minutes. Then, season with 1 tsp sea salt and fresh pepper and paprike. Add fresh parsely and lemon juice. Stir well.
