4 Bock Zone Meal |

One of my favorite places is Chipotle. I love being able to build my own custom burrito bowl, but not only that, I just love the flavor explosions. Well if you love Chipotle, you are probably going to dig this 🙂 The best part of it is when you prep a bunch of rice and beans, you can build this super fast for quick lunches and dinners.

Chicken Cilantro Apple Rice

Ingredients
Herbs/Spices
  • 0.5 tsp olive oil
  • black pepper to taste
  • 2 tbsp fresh cilantro chopped
  • 2 tbsp white wine vinegar
Fruits / Veggies
  • 1/4 cup black beans cooked
  • 1/4 cup long grain brown rice cooked
  • 79 grams granny smith apples cubed
  • 40 grams shallots diced
  • 50 grams avocado cubed
Meats
  • 5 oz grilled chicken

  • 2 tbsp white wine vinegar

  • 1/4 cup black beans cooked
  • 1/4 cup long grain brown rice cooked
  • 79 grams granny smith apples cubed
  • 40 grams shallots diced
  • 50 grams avocado cubed
Meats
  • 5 oz grilled chicken
Instructions
Cook Rice & Chicken
  1. Cook the rice and chicken. Tip: cook up extra so you can build more meals on the go!
Prepare Vegetables
  1. Dice or cube the apples, cilantro, shallots, and avocado. Drain the black beans and set aside.
Make the vinaigrette
  1. In a small bowl, mix the white wine vinegar, shallots, olive oil and a couple of shakes of black pepper. Mix well.
Finish and enjoy!
  1. In a larger bowl, combine the chicken, beans, rice, and finally, pour the vinaigrette mixture on top. Stir well, serve and enjoy!
